Company Meat Loaf

: Taste of Home’s Treasury of Home Cooking, volume 4, 2001 p. 33.
Ingredients:
2 eggs 2/3 c. milk 1-¼ c. finely chopped onions 1 c. dry bread crumbs 1 c. (4 ozs.) shredded sharp cheddar cheese 2/3 c. grated carrots 1 tsp. salt 1 tsp. seasoned salt 1 tsp. Worcestershire sauce ¼ tsp. pepper 1-1/2 lb. ground chuck ¼ c. packed brown sugar ¼ c. catsup 2 tsp. prepared mustard
Instructions:
In a large bowl, combine the first 10 ingredients. Crumble beef over and mix well. Pat into an ungreased 9-in. x 5 in. x 3 in. loaf pan. Bake uncovered, at 350° for 1 hour; drain. Ina a small bowl, combine the brown sugar, ketchup and mustard. Spoon over loaf. Bake 30 minutes longer or until no pink remains and a meat thermometer reads 160°. Let stand 10 minutes before cutting. Recommends that it be served with Baby potatoes, quartered, cooked, drained and sprinked with parsley and fresh asparagus spears, steamed and drained. Note—Instead of one big loaf, could make several mini-loaves. Drier, but not too dry.
