Mac’s Potato Salad

: Mac’s Barbecue in Owensboro, KY (Evansville Courier & Press, Sunday, April 21, 2002)
Ingredients:
5 pounds red potatoes 1 large jar Miracle Whip l large jar minced pimentos, drained 2 large onions, finely minced Salt and pepper to taste ¼ cup sugar or to taste
Instructions:
Boil potatoes in their jackets until tender. Peel and cut up. Add the Miracle Whip while the potatoes are still warm and combine gently. Add pimentos, onions, salt and pepper. Add sugar, starting with about ¼ cup, adding more to taste if necessary. This potato salad is best if it’s chilled for a day before serving. Add more Miracle Whip if the potato salad is too dry.
