Mexican Wedding Cakes

Ingredients:
1 cup soft butter or margarine 1/4 - 1/2 cup granulated sugar 1/2 teaspoon salt 1 teaspoon almond extract or 2 teaspoons vanilla 2 cups sifted all-purpose flour 1 - 2 cups finely chopped or ground pecans
Instructions:
1. Mix butter with sugar until creamy. 2. Add salt, extract, flour, nuts; mix well. 3. Refrigerate until easy to handle. 4. Start heating oven to 325 degrees. 5. Using fingers, shape dough into 1" balls. 6. Place on cookie sheets and flatten balls with bottom of glass dipped in flour. 7. Bake 10 - 12 minutes, or until light brown. 8. While cookies are warm, sprinkle with confectioners sugar. Makes 4 - 5 dozen.
