Curried Chicken Salad

Ingredients

(Triple for a big bowl for company/party)

3 c. diced cooked chicken
   (approximately 1 ½ lbs. frozen chicken breasts)
1/3 c. thinly sliced celery 
2 Tbsp. lemon juice
1 1/4 tsp. salt (optional)
1/4 tsp. black pepper
1 1/2 tsp. curry powder
6 Tbsp. mayonnaise
3 Tbsp. chopped walnuts

Instructions

Combine all ingredients; toss lightly.  Chill. 

Original recipe called for grapes and used pecans rather than walnuts.  The first time I made it, I had walnuts on hand.  It was a hit, so didn’t change.  I never added grapes because I don’t like such dishes to taste sweet.  However, all the “fine” restaurants seem to add grapes.  What do I know?
