1 ¼ c. all-purpose flour 1 c. (2sticks) butter or margarine, softened 3 c. quick old-fashioned oats 1 tsp. baking soda ¾ c. granulated sugar 1 1/3 c. (10 oz.) package) Nestle Toll House Semi-Sweet Chocolate covered Raisins ¾ tsp. ground cinnamon ¾ c. packed brown sugar ½ tsp. salt 2 eggs 1 tsp. vanilla extract 1 c. chopped nuts (I use walnuts)
Preheat oven to 375°. Combine flour, baking soda, cinnamon and salt in a small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl until creamy. Gradually beat in flour mixture and oats. Stir in chocolate-covered raisins and nuts. Drop by rounded tablespoon onto ungreased baking sheets. Bake for 9 – 11 minutes or until golden brown. Let stand for 2 minutes; remove to wire racks to coool completely. Using a convection oven, bake at 350° for about 8-10 minutes. Makes about 3 ½ dozen cookies.
